Kitchen/Food Services Category

     

  Criteria in the kitchen/food category concern food preparation, service and sanitation. A facility must provide each resident with a nourishing, palatable, well-balanced diet that meets the daily nutritional and special dietary needs of each resident.

    The following federal regulation revisions and F numbers apply to surveys started on or after November 28, 2017.

  1. The facility provides each resident food prepared by methods that conserve nutritive value, flavor, and appearance and is palatable, attractive and at a safe and appetizing temperature. (42CFR 483.60(d)(1(2) F 804)
  2. The facility provides each resident food that accommodates resident allergies, intolerances, and preferences; and appealing options of similar nutritive value to residents who choose not to eat food that is initially served or who request a different meal choice. (42CFR 483.60(d)(4)(5) F 806 )
and/or;
The facility provides each resident drinks, including water and other liquids consistent with resident needs and preferences and sufficient to maintain resident hydration. (42CFR 483.60(d)(6) F 807 )
  3. The facility provides each resident at least three meals daily at regular times comparable to normal mealtimes, with no more than 14 to 16 hours between evening meals and breakfast and provides suitable, nourishing alternative meals and snacks to residents who want to eat at non-traditional times or outside of scheduled meal service times. (42CFR 483.60(f)(1)-(3) F 809 )
  4. The facility procures food from sources approved or considered satisfactory by federal state or local authorities and stores, prepares, distributes and serves food in accordance with professional standards for food service safety. (42CFR 483.60(i)(1)(2) F 812 )
and/or;
The facility has a policy regarding use and storage of foods brought to residents by family and other visitors to ensure safe and sanitary storage, handling, and consumption. (42CFR 483.60(i)(3) F 813 )

    The following federal regulation revisions and F numbers apply to previous surveys before November 28, 2017.

  1. The facility provides each resident food prepared by methods that conserve nutritive value, flavor, and appearance; and food that is palatable, attractive, and at the proper temperature. (42CFR 483.35(d) (1)-(2) F 364 )
  2. The facility provides substitutes offered of similar nutritive value to residents who refuse food served. (42CFR 483.35(d) (4) F 366 )
  3. The facility provides each resident at least three meals daily at regular times comparable to normal mealtimes, with no more than 14 to 16 hours between evening meals and breakfast and provides snacks at bedtime. (42CFR 483.35(f) F 368 )
  4. The facility procures food from sources approved or considered satisfactory by Federal, State or local authorities; and stores, prepares, distributes and serves food under sanitary conditions (42CFR 483.35(i) F 371 )
